i have had a real hankering for fatty food. well, not really fatty...but really just more things that i usually say "no thank you" to...i have been cooking and eating.    

and it feels good.  

last night...for like the first time in years...i cooked pasta. yes, penne pasta with spicy tomato sausage sauce...adapted from my friend whitney over at her blog, whitney drew.  she makes this spicy penne shrimp pasta that has always sounded i made it with some modifications.

{spicy tomato penne with sausage and spinach}


  • 12 ounce bag of whole wheat penne
  • 4 tomatoes on the vine
  • 4 links ground sausage
  • 4 garlic cloves
  • 1/3 cup 0% greek yogurt
  • 1 ounce goat cheese
  • pinch of red pepper flakes
  • pinch of herbes de provence
  • 1 TB olive oil
  • half a box of spinach (easily 3-4 cups)
  • salt and pepper to taste
  1. cook penne according to box directions (i stop early by a minute or two because i like al dente and it cooks a teeny bit more when you saute the noodles in the pan with the sauce
  2. add olive oil in pan. heat and add chopped garlic.  
  3. chop tomatoes and add to pan. add in pinch (or more) of herbes de provence.  heat for 5-6 minutes until more sauce like texture. 
  4.  meanwhile, remove sausage from casing and brown in another pan. 
  5. move sausage into tomato mixture and add goat cheese and greek yogurt. mix until melted. add spinach towards the end and let wilt.  
  6. add in penne and mix again while on low heat, covering all the noodles evenly.   
  7. serve and enjoy. 

now, i'm no food photographer...and these were just taken with my iphone...but here are a couple shots so you can see how tasty it was.
